This expression "orto" refers to the annual preparation and cultivation of a section of land for the express production of vegetables for the kitchen. It invariably utilises the abundant water from the well to irrigate the plot or plots. I have always been impressed at the large quantity of produce the ortos generate. I have seen this done on a near industrial scale and certainly enough to sell to the public for an extended period of time.
